First, let me say that the response of Diane B. was copied and pasted from a discussion I had on Chowhound forums (http://chowhound.chow.com/topics/766467) without proper credit and published as his own writing. Second, let me answer your question in my own words. I recommend you use the stove model and here's why: electric ranges pressure all over the map in its "standard" pressure (mostly lower, thusly take longer to cook and regular pressure cooker temperature and although some are below the "norm" of 15 PSI, there are three brands that are not (Woflgang Puck, NESCO and Cook Essentials). Why is this a problem? Well most cookbooks and "legitimate" online prescriptions are written for 15PSI pressure cookers – this means that all the deadlines suggested be wrong in their recipes. The major disadvantage of electricity is the inability to make a quick (20 seconds) open pressure cooking leaves immediately (for steamed vegetables and fish). This open approach also avoids having to release steam through the valve – an important consideration when cooking sparkling with food such as grains, beans, milk or alcohol (eg, alcohol 100% braising or poaching) – which can shoot superheated liquid or lock the valve when they are releasing the pressure through the valve. Another drawback of electricity, is that they all have an insert inside with a nonstick coating (except of Instapot has a stainless steel insert) – it is difficult for the use of accessories and sensitive (if the cover is pulled all the pressure cooker and you have a shot to get a new insertion) – I recommend the use of silicone steamer baskets and forms of this type of pressure cookers. Of course, your advantage is to automatically regulate heat and pressure begins to tell the cooking time from the time it reaches the pressure. The regulation of heat in oven burner pressure becomes to some people because there is a learning curve and a bit of fiddling involved to discover how the heat can go without losing pressure – usually for two recipes that I have it!
